THREE Tomato festival recipes from Chef Steve

1. Tomato Crostini with fresh bead
    3/4 cup chopped plum tomatoes
    2 tablespoon fresh chopped basil
    1 teaspoon capers (optional)
    2 tablespoon sweet balsamic vinegar
    1 tablespoon olive oil
    1/8 tablespoon salt
    Dash of black pepper
    1 garlic clove minced
    6 1-inch slices fresh bread baguette (either toasted or fresh)
combine ingredients in a bowl and spoon on fresh bread  or toast and
serve as an appetizer

2. Fresh (raw) tomato pasta Sauce (Aio e Oio) with basil
    4 garlic cloves
    Salt to taste
    1/3 cup olive oil
    Chopped hot jalapeño pepper ( amount to taste) optional
    1/2 teaspoon of sugar
    1 pound fresh very ripe tomatoes
    1/2 cup basil leaves
    1 pound pasta thin style
combine ingredients. mix into pasta. Toss lightly. Serve hot or at room temperature.

3. Grilled tomato & onion salad with fresh basil and vinaigrette  
    4 tomatoes cut in half and grilled for 5 to 10 minutes
    (dependent on size)
    2 medium size yellow onions cut in half and grilled
    (olive oil on top)10 minutes
      vinaigrette Dressing
    2 cups red wine vinegar
    2 cups olive oil
    1/4 cup honey
    1 teaspoon minced garlic
    1 cup of fresh basil
Combine Tomatoes, onions and basil with 1/2 cup of the vinegarette. serve.
