Rotisserie Chicken with Sweet & Spicy BBQ Sauce

Ingredients (serves four to six)
1 roasting (broiler) chicken, about 5 pounds
sweet & Spicy BBQ sauce*
6 ripe tomatoes - pureed
1/2 cup brown sugar
1/2 cup molasses
1/2 cup honey
1 medium yellow onion, finely diced
10 cloves of garlic, minced
1/2 cup fresh orange juice
1 cup chopped parsley or cilantro
2 tablespoon jalapeno pepper puree**
1/2 lb. jalapeno peppers w/ seeds
1/2 head of garlic gloves peeled (6 to 10 cloves)
1/4 cup olive oil
salt and pepper to taste
Prepare chicken
• Clean and truss chicken on rotisserie bar; baste with BBQ sauce
• Place chicken on rotisserie over high heat (450°) with cover closed for 20 minutes
• Reduce heat to 350°, basting every 10 minutes until caramelized and juice runs clear when leg joint is pierced (approx. 1 hour)
Sweet & Spicy BBQ Sauce*
• Saute Onions and Garlic
• Blend in remaining ingredients and simmer until thickened (appox. 30 minutes)
