Baby Back Ribs with Asian BBQ Sauce with Chef Steve
Ingredients (serves six to eight)
For the marinade
4 Meaty baby back pork ribs
4 Stalks Lemon Grass
2 medium onions
6 cloves garlic
1/4 cup asian fish sauce
1/4 cup brown sugar
1/4 soy sauce
2 tablespoons rice vinegar
1 cup vegetable oil
for the glaze
2 tablespoons honey
1/3 cup applesauce
6 tablespoons ketchup
1/2 cup hoisin sauce
1/4 cup brown sugar
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon chili paste
Cilantro Sprigs
Instructions:
Place ribs in a deep wide pan. Combine all ingredients for marinade in a food processor or blender, process to paste. Pour over ribs. Cover and marinate for at least six hours or overnight.
Heat the grill. Place on the rack ad grill with indirect heat, turning ribs over halfway through cooking. Total cooking time approx. 1 1/2 hours. (Can be done several hours in advance and set aside until ready to serve).
When ready to serve, combine all ingredients for glaze in a bowl. Continue grilling, turn ribs often and brush frequently with glaze, until well glazed and charred on the outside, about 15 minutes total. Slice ribs and serve on a platter with cilantro sprigs.
