Fabulous Grilled (yes grilled) Fries
These fries are made with a starchy (baking potato): flavored with garlic, fresh herbs and Pecorino Romano cheese.
4 servings
2 large baking potatoes
Cut into 4 by ½ inch sticks
½ cup of extra virgin olive oil
3 large garlic cloves, minced
¼ teaspoon ceacjh of minced sage and rosemary or oregano
¼ cup of freshly grated Pecorino Romano cheese
Salt and freshly ground pepper
- heat grill to 450 04 500 degrees. Place cast iron skillet or 2 inch aluminum pan (8x12 apx) on grill over heat. Pour oil in pan heat to “boiling” place fries in oil grill until they start to brown. Remove from heat and pour off all the oil but a 1/4 inch. Place back on grill with garlic and herbs and turn with spatula two or three times. Remove from heat when they are browned and crispy. Drain oil and place on serving plate toss with grated cheese and season with salt and pepper and serve.
